One uses pig bones, hooves, skin, and other waste products. Kosher means it contains no pig products at all and it's production was supervised (or at least approved) by a rabbi.

anything kosher is not handled with any metal utensils. Even Pickles, it's in the Bible somewhere.

I know gelitan uses pig fat, perhaps kosher doesn't.
