This recipe is from Mario Batali from the Food Network. I use some of the pesto in the soup for flavoring as opposed to a dollop on top as directed at the end of the recipe.
Minestrone con Pesto
Pesto:
3 tablespoons pine nuts
2 cups fresh basil leaves, preferably "picolo fino"
1 clove garlic
1 pinch sea salt
5 ounces Ligurian extra-virgin olive oil
Minestrone:
1 1/2 cups borlotti (or pinto) beans
1 1/2 cups cannelloni (or white) beans
1 medium red onion, cut into medium dice
2 medium zucchini, cut into 1/2-inch moons, 1/2-inch thick
4 plum canned plum tomatoes, cut into 1/2-inch dice
4 stalks celery, cut into 1/2-inch slices
2 potatoes, peeled and cut into 1/2-inch dice
2 leeks, cleaned and cut into 1/2-inch moons
Salt and freshly ground black pepper to taste
4 tablespoons extra virgin olive oil
6 ounces small shells pasta
1/2 cup pesto
To make the pesto: In a large stone mortar, place the pine nuts, basil, garlic, and salt, and grind with a pestle until paste. Drizzle in the olive oil, beating with a wooden spoon. This can also be done in a food processor. Store in jars, topped with extra-virgin olive oil, for up to 1 week.
To make the minestrone:
Soak the borlotti and Cannelloni beans separately overnight and drain.
In a large soup pot, place both kinds of beans, the onion, zucchini, tomatoes, celery, potatoes, leeks, and olive oil, and cover by 1-inch with cool water. Cover the pot and bring to a boil. Lower the heat and simmer until the beans are tender about 1 hour to 1 hour and 30 minutes. Add the pasta, and turn the heat to high. Cook the pasta at a boil until al dente. Divide the soup among 4 bowls and top each bowl of minestrone with a dollop of pesto floating on top.

I got this! It takes a while to make, but it's worth it. I can tomato puree or sauce I can (same size) tomato juice 4 cloves garlic 2 tsp. oregano 1/4 cup fresh basil Start these cooking over low heat for at least five or six hours, stirring every 1/2 hour. If you have a crock pot, you won't have to stir it, and can leave it all day (the more time, the better). At this point, 1 cup red beans 1 cup diced cherry tomato 1/2 cup chopped celery (plus a few pieces of celery leaves) 1 carrot, chopped 1 handful chopped fresh green beans 1/2 cup sliced or diced red onion 1/2 cup diced summer squash 1/2 tsp. Herbes de Provence 1/2 tsp. red pepper or cayenne pepper 1 tsp. black bepper 1 bay leaf salt to taste After the veggies are cooked, add 1 cup cooked tube pasta Parmesan cheese on top. Keep cooking on medium heat about an hour, eat a piece of carrot to see if it's soft enough to be ready. This is a pretty thick minestrone, but if you want, you can add more tomato sauce to thin it out, or more tomato juice if you like it Olive Garden style watered-down. This is still my favorite version of it...put a lot of cheese on top of the bowl and then stick it in the oven to make like a French Onion soup crust.

Recipe Summary

1 white onion, chopped

1 yellow squash, sliced
1 zucchini, sliced
Dried oregano
Chopped fresh basil
Salt
Pepper
6 cups chicken stock, heated
8 ounces pasta shells
2 tomatoes, diced
1 head broccoli, in florets
In soup pot melt butter and saute onion and garlic. Add carrots and cook until tender, about 10 minutes. Add squash and zucchini. Season with oregano, basil, salt and pepper. Add hot chicken stock and bring to a simmer. Add pasta, tomatoes and broccoli. Simmer until pasta is cooked through, about 5 minutes
