The 2 things I eat that I consider the most healthy are Sushi and Spinach salads. You can also make up certain types of spicy pasta with Seafood that is very lowfat. You can also get these Seafood pasta dishes for like $4.xx at a grocery story frozen, just throw it in a skillet for 10 minutes and you have an awesome lowfat meal that actually tastes good.

I also like to make my own Salsa, and other then the salt/beer content it's great for you! It's basically just vegetables and salt. Hell, here's the full recipe, it's REALLY good:
-2 TBSP Redwine vinegar
-6 large tomatoes
-2 large onions, red, spanish, whatever you like
-1 - 2 8ounce cups of tomato sauce. I like it thick, so I used one.
-1 or 2 of the small cans of diced chili's, I think they're like 4 ounces.
-maybe 2 tablespoons of finely cut cilantro
-Green onions, one of those rubber band wrapped sets with like 5 - 10 onions in them.
-Jalapenos, however many you want, I like it hot, so I get about 2 big handfulls diced pretty small.
-Habeneros, if you like it really really hot go 3 max.
-(Optional) about 1/3 to 1/2 bottle of beer, Corona and Beck's both work good.
-Salt to taste
-Teaspoon of cumin
-It's not necessary, but I also like to toss in some Chili powder and a few shakes of habenero hot sauce. Oregano won't hurt either. It's very flexible, Salsa is hard to screw up.

Diced it all up, mix it together. Might take overnight to get the flavor to settle. (You might say become homogenous.) I usually can't hold out that long though.

I make this about 4 times a year and get nothing but compliments. Of course no one will say they hate it, but I keep getting asked for more, unsolicited.
