Although the hammer handle trick is still used by many plumbers, it can cause a conflict with some of the new sinks. You need a detailed Kitchen design that includes a technical rendering of the interior sink base elevation. This will specify the bottom height of the sink that you are getting. With undermount sinks, and especially considering the deep cuisine sinks and farmers sinks available from companies like Franke, this saves time and money in the long run. Good luck.

The average height from the floor would be about 14-16". Some carpenters use their hammer to measure as a rule of thumb.

Here in Michiigan we set it at 18" off the floor
