"Is any among you sick? Let him call for the presbyters of the Church, and let them pray over him, anointing him with oil in the name of the Lord; and the prayer of faith will save the sick man, and the Lord will raise him up; and if he has committed sins, he will be forgiven" (James 5:14-15).
This sacrament is now called the Anointing of the Sick and a person does not have to be dying to receive it.
Any one physically or mentally ill, aged and infirm, or about to receive surgery can receive this sacrament of healing.
The liturgical actions in the Anointing of the Sick include the following principal elements:
+ Scripture is read.
+ The priests of the Church in silence lay hands on the sick.
+ They pray over them in the faith of the Church
+ They anoint them with oil blessed by the bishop.
The effects of the Anointing of the sick are:
- Uniting of the sick person to the passion of Christ, for his own good and that of the whole Church
- The strengthening, peace, and courage to endure in a Christian manner the sufferings of illness

In the countries of the Orient and in southern Europe, olive oil has always been a necessity of daily life, much more than with [Americans]. It enters into the preparation of food; it is used as a remedy, internally and externally; in past centuries it was the chief means of furnishing light, being consumed in lamps; it was employed in ancient times by the athletes of the Olympic games, to give suppleness to their muscles. Hence we see the various symbolic meanings of which the Church takes cognizance when she uses it to give us spiritual nourishment, to cure our spiritual ailments, to diffuse the light of grace in our souls, and to render us strong and active in the never-ending conflict with the Spirit of Evil. The use of oil to express the imparting of spiritual strength is so appropriate that the Church employs it not only for the anointing of living beings but also for bells and chalices and other ...things which are to be used as aids in the sanctification of her children.
The symbolism of anointing with oil also signifies the Holy Spirit,[Cf. 1 John 2:20-27...] to the point of becoming a synonym for the Holy Spirit.

Its in the book of James so we do it.
Anointing was originally representing the Holy Spirit covering someone in the Jewish faith. (Anointing of Kings ect.)
Jam 5:13 Is any among you afflicted? let him pray. Is any merry? let him sing psalms.
Jam 5:14 Is any sick among you? let him call for the elders of the church; and let them pray over him, anointing him with oil in the name of the Lord:

Well it comes down to the fact that in the past the water was so polluted with sewage and waste that it would make you sick so if you were already sick then pouring water on a feverish sick person could quite likely make them sicker and or kill them. That is why so many people drank wine, ale and beer the water was known to make you sick. Look back to the collera epidemics in London and other places. Even the Bible talks of Jesus drinking wine or turning water to wine but is doesn't say anything about him drinking the water,maybe he was a home brewer or winemaker. And water would have to be pretty polluted to allow someone to walk on it. LOL

Significance is not in the oil it is in the prayer and message that God heals people. Preacher uses oil to lay hands on the sick but healing comes from God. For all you people that do not believe in God I dare you to get sick and call out to god and tell him to heal you see what happens.
