The difficulties people experience are because they have learned computer interaction using a Microsoft operating system. If Linux had been had been the operating system to succeed in the late eighties / early nineties your question would be the other way around.
Linux IS user friendly especially the more desktop oriented distributions. There's graphical tools to configure the system and the only problems still requiring a little bit of confidence to solve are wireless networking issues but it's just confidence. If hardware / software manufacturers supported Linux the same way they support Windows then people would be more inclined to try it. There's more help available in user groups than you would believe and LINUX USERS HELP EACH OTHER FOR FREE.
Linux IS easy to use, try something like Ubuntu on a live CD. You'll be surprised just how easy it is.

Because the stuff that Microsoft does to make Windows easy for everybody is what makes it hang up and crash.
Also, linux is made by volunteers, and is open source. You are free to change the code to make it easier to use without infringing on a copyright.

to express an idea in simple language takes a lot of effort. most people work on Linux solutions in their spare time or at the beginning of their careers to gain experience, and do a passable job without time consuming, organizing of their work, and without any collaboration with inter-disciplinary experts,or without any market research, so even though it is a great platform there will remain a certain crudeness about the whole thing.
