Fresh herbs can be stored in an open or a perforated plastic bag in your refrigerator crisper drawer for a few days. If you don’t have access to commercial perforated bags, use a sharp object to make several small holes in a regular plastic bag.

To extend the freshness of herbs, snip off the ends of the stems on the diagonal. Place herbs in a tall glass with an inch of water, like cut flowers. Cover them loosely with a plastic bag to allow for air circulation. Place them in the refrigerator and change the water daily. Herbs may last a week or more stored this way. Note: The flavor may diminish the longer they are stored.

You can store it in the freezer, no need to blanche, just put the leaves into plastic bags and freeze. Alternatively you can tie up a bunch of mint (on the stalks) with string and hang in a warm dry place until it has dried out, usually a week, and then (over a bowl) rub the leaves between your hands and they will all crumble into the bowl - decant into an airtight container.

This is how I store basil. I imagine you can do the same thing with mint.
I separate all the leaves, rinse them, and let them dry completely. The I lay them out on a cookie sheet and place in the freezer. Once they've frozen, I put them in a Ziploc bag. By freezing the leaves this way, you can take them out a leaf at a time as needed.

Fresh mint stores well if you:
1. wash it as soon as you get it home
2. wrap it in a paper towel
3. put it in a plastic bag
4. store in the vegetable drawer in your fridge.

Chop off what you need as you need it. Should last a few days.
Mint is very easy to grow (it'll grow like a weed so it's best to put it in a pot) and would be available year 'round!

If you only want to store it for a few days - wrap it in a damp towel and put in a ziplock bag in the fridge.

If you want to keep it for a long period of time - freeze it in a ziplock bag or leave it in a paper bag for a day then store it in a glass air tight container
