Ice Cream Sundae Pie
INGREDIENTS:
1 cup finely crushed chocolate wafers
1/2 cup finely chopped walnuts
1/4 cup butter, softened
1 cup heavy cream
2 tablespoons confectioners' sugar
1 quart vanilla ice cream, softened
1 (10 ounce) package frozen sweetened strawberries, thawed
1/4 cup walnut halves
DIRECTIONS:
Preheat oven to 375 degrees F (190 degrees C).
In a medium bowl, mix together chocolate wafer crumbs, chopped walnuts, and softened butter until thoroughly combined. Press mixture firmly into bottom and sides of a 9 inch pie pan. Bake in preheated oven for 7 minutes. Refrigerate until well chilled.
In a medium bowl, whip together whipping cream and confectioners' sugar until soft peaks form. Spread half of ice cream into bottom of crust. Cover with strawberries, then cover strawberries with remaining ice cream. Spread whipped cream over ice cream, and garnish with walnut halves. Freeze for 2 hours before serving. Allow to stand at room temperature for 10 minutes before slicing.
Tia-Maria
ngredients
1 cup Water
3/4 - 1 cup Brown Sugar
4 tsp powdered Coffee
1 cup Bundaberg Amber Rum
4 tsp Vanilla Extract
Mixing Instruction
Boil water, sugar and coffee for 10 minutes and let cool. Add rum and vanilla. Put in clean bottle(s) and leave for 1 week before using.

Ice Cream Chocolate Cake with white chocolate sauce
Ingredients
For the sauce
100ml/3½fl oz double cream
55/2oz white chocolate, broken into pieces
For the cake
1 chocolate muffin, sliced in half horizontally
1 scoop of vanilla ice cream
2 tbsp of brandy-soaked cherries
drizzle of Tia Maria
white chocolate sprinkles, to garnish
Method
1. To make the sauce, scald the double cream in a saucepan.
2. Remove from heat and stir through the chocolate pieces. Leave to cool for a few minutes.
3. Hollow out the centre of the muffin with a teaspoon.
4. Place the muffin on a baking tray and bake in a moderate oven 180C/350F/Gas 4 for three minutes to warm through.
5. In a small bowl, fold the cherries through the ice cream, creating a rippled effect if desired.
6. Remove the warm muffin from the oven and put on a serving plate.
7. Drizzle over with Tia Maria.
8. Fill the centre of the muffin with a scoop of ice cream and replace the muffin top.
9. Pour over the white chocolate sauce and garnish with white chocolate sprinkles.
10. Serve immediately.
