I made some simple syrup (sugar water) recently and put it in bottles in my cabinet. My mom says that my grandmother used to put it in the refrigerator because it would "go bad". However, except for maybe bugs getting to it, I do not see how either sugar, water, or both combined could go bad. Anyone know?

They only thing you have to concern yourself with is crystallization. This comes with age.
This is evidenced by the appearance of granular sugar.
This is basically a minor annoyance.
There is nothing there that can harm you.
Believe me, this takes a very long time at room temperature.
There is no reason to refrigerate simple syrup, or honey for that matter. It's unnecessary.
This is a product that will not "go bad" such as a
common perishable item.

The reason they put in the refrigerator in because so bugs and thing wont get into it.

It should be fine until it's opened. I would probably refrigerate it after you've broken the seal.

I would say, keep it in the refrigerator. I wouldn't want to risk it going bad and using it in something that would make you or anyone sick. If you aren't going to use all of it right away, freeze what you aren't going to use.

It always needs to be refrigerated. The ratio of sugar is not high enough to prevent spoilage.

All the recipes I seen.....it says that it should be refrigerated....
