Here you go - I have two for you. One is for Banana Bread, the other is for Banana Split Cake.
BANANA -NUT BREAD
2 cups sugar
1/2 cup shortening
2 eggs
1/2 t. baking soda
1/2 cup buttermilk**
1 cup mashed Bananas **
1 t. salt
1 t. vanilla
pinch salt
1 cup walnuts (op pt)
Cream sugar and shortening; add eggs and mix well. Set aside.
Mix buttermilk and baking soda; add mashed bananas.
Add flour and banana mixture alternately to sugar mixture.
Then add nuts, vanilla, and salt.
Bake at 350 in bundt pan for 45 minutes. You can use a loaf pan or a sheet cake pan. Just don't cook as long.
**If you don't have buttermilk, use can use reg. milk & add 1 Tbs vineger to it.
**Sprinkle a little lemon juice over bananas to prevent them from darkening.
BANANA SPLIT CAKE
Layer:
2 cups graham cracker crumgs
1 stick margarine, melted
Mix together well & press into a 9x13 cake pan.
Beat:
2 eggs
2 cups powdered sugar
2 sticks margarine, softened
Beat with an electric mixer for a least 15 minutes or until creamy & fluffy. Spread over graham cracker crust.
Slice 6 to 8 bananas and layer next.
Pour 1 (15 to 20 oz) can crushed pineapple over the bananas.
Cover with 8 oz carton of Cool Whip, thawed.
Sprinkle with nuts and cherries on top.
Refridgerate.

Banana Bread
Sift together 2 cups all purpose flour, 1/2 tsp salt, 1 tsp baking soda.
Mix together 3 mashed bananas, 1 cup of sugar, 1/2 cup melted shortening and 1 egg.
Combine wet ingredients with dry ingredients. Pour into a greased and lightly floured bread pan. Bake at 350 degrees F. for about 45 minutes or until a toothpick comes out clean from the middle.
If you feel like adding walnuts or pecans use about 1/2 cup to 1 cup depending on how many you want in the bread.

BANANA PUDDING PIE
7 ripe bananas, sliced
2 cups whole milk
1 5 oz. pkg. French vanilla pudding mix (instant)
1 8 oz. pkg. Philadelphia cream cheese, softened
1 tablespoon banana flavored liquor or extract
1 14 oz. can condensed milk (sweetened)
1 12 oz. tub Cool Whip, thawed
1 graham cracker crust
Mix the pudding mix with the milk in a blender or with an electric mixer. Use the type of instant pudding mix which doesn't require cooking.
In a separate bowl, blend condensed milk with the cream cheese until smooth, then fold in the Cool Whip.
Combine cream cheese mixture and pudding mixture, and stir in the liquor or banana extract, combining well.
Slice the bananas and layer over the bottom of the pie crust. Spread mixture over bananas.
Refrigerate until serving time. Garnish with chocolate curls or additional Cool Whip and banana slices.

Banana Java Bread
3 cups biscuit mix
3/4 cup brown sugar
1/4 cup all-purpose flour
1/2 cup strong coffee (instant is fine)
1 cup mashed banana
1 egg, beaten
Mix biscuit mix, brown sugar and flour. Add coffee, banana and egg, mixing well.
Grease 2 loaf pans well, using solid shortening. Bake at 350 degrees F for 50 minutes or until done. Cool for 10 minutes in pan.

BANANAS FOSTER (for two)- In a frying pan, 1 tbsp Butter, 3 tbsp Brown sugar and one banana sliced length wise and halved. Cook on moderate heat adding rum and a pinch of cinnamon until bananas soften and the sauce begins to thicken (Caramelize). Remove from heat and serve over Vanilla ice cream (in large red wine glasses is nice) and serve immediately.
