make sure all of your 'dry' ingredients are fresh (example: baking powder, baking soda) if they are not very fresh, the dough will not rise.

I like to use self-rising flour instead of all-purpose flour. Makes fluffier cookies, and some varieties are softer & chewyier.

I also use baking powder, if I don't have self-rising flour. I replace half the baking soda with baking powder.

Make sure the butter and sugar is creamed and fluffy before adding egg, and the egg is mixed well before adding dry ingredients, with raisins and oatmeal last.

Refridgerate the cookie dough for at least an hour before baking, and your cookies will not be so flat, also. This helps firm up the butter and slows the baking process, keeping the dough from spreading out while baking.

oatmeal cookies are supposed to be flat, follow the recipe. Also, double check your liquid measurement. Make sure you are adding the amount of water it calls for. 1/3 cup is not the same as 1/4 cup. to much water would make the batter runny, therefore the cookies would be really thin. they should be about 1/4 inch when done. (they spread while cooking)

Add another egg and 1/4 cup flour with 1/2 tsp baking powder and 1/2 tsp baking soda to your recipe.
Make sure you cream the butter and sugar first then add eggs and vanilla extract and dry ingredients with the raisins and oatmeal last.

I like to put in a 1/2 tsp cinnamon and replace 1/2 the raisins with craisins ( dried cranberries)

It really takes a long time for oatmeal to go bad. I've never seen it happen. As a general rule, when in doubt, throw it out. In this case I would definitely use it. Enjoy.

I would try just adding a 1/2 cup more flour. Did you use butter, margrine, or crisco? If you used margerine they will be flatter. If you want to IM me feel free. Good LUck.

baking soda is a leavening agent. use 2 tspn next time.
