i got an assignment to do and i cant get that info on the net so please help me out

The primary purpose in baked goods is to bind the ingredients and add bulk. It also is the major supplier of calories in the foods it is in and lasts for a long time without refrigeration. All flours are made from wheat unles specifically stated on the label as being made from a different grain. The range of wheat flours are due to gluton content which determines the tensile strenght of the dough made out of the flour. (how much it can rise before bursting) Pizza dough must have a high gluton content whereas pie crust does not. All purpose flour is a middle of the road type that can be used for most everything.

The flour, actually, IS the food; it's ground wheat.

All the other ingredients are to make the flour DO things: be more digestible, be tastier, become a mass that can be easily handled, be pizza, etc.

Depending what you make. Flour has yeast in it. Which... (not to be gross) practically farts in the dough, and causes it to rise when you bake it.
