Fast Gorgonzola Sauce and Gnocchi Message List

(Gnocchi: an Italian potato dumpling)
4-6 cups frozen gnocchi
3 cups heavy cream
½ cup gorgonzola
Salt and pepper
1 tsp chopped thyme
1 tbsp chopped parsley
Shaved parmesan cheese for garnish
In a 4-6 quart pot, boil the gnocchi as directed on the package. In a
sauce pan add heavy cream and bring to a simmer (uncovered so that is
doesn't boil over). Add the gorgonzola. Simmer more until the sauce
coats the back of a spoon. Then season with salt and pepper (be
careful on the salt, because of the blue cheese). Add the herbs and
gnocchi carefully tossing it in the sauce, serve immediately with
shaved parmesan on top.

BANANAS FOSTER (for two)- In a frying pan, 1 tbsp Butter, 3 tbsp Brown sugar and one banana sliced length wise and halved. Cook on moderate heat adding rum and a pinch of cinnamon until bananas soften and the sauce begins to thicken (Caramelize). Remove from heat and serve over Vanilla ice cream (in large red wine glasses is nice) and serve immediately.

Pad Thai with Tofu

PHAD THAI

1/2 lb. dried rice noodles, 1/8" wide
Warm water
1/2 lb. shrimp or chicken or pork or TOFU
1/4 c. fish sauce
1/4 c. & 2 tbsp. sugar
2 cloves finely chopped garlic
1/4 c. & 2 tbsp. white vinegar
1 tsp. paprika
4 slivered green onions
1/2 c. oil
2 eggs
3/4 lb. bean sprouts
2 tbsp. ground roast chili
3/4 c. ground roasted peanuts (peanuts finely chopped)
Lime wedges

Soak noodles 30 minutes until pliable and drain (sometimes it takes longer). Mix sauce (sugar, vinegar, paprika and fish sauce). Set aside. Heat wok, stir fry meat or tofu, add noodles. Add garlic and sauce. Tuck eggs under noodles and add oil as needed. Add sprouts and garnish with green onions, peanuts and lime wedges.
