This is a great question. An HDMI cable keeps the signal in the digital domain. That means it has no chance of degradation in transit. All forms of analog, be it S-vid or composit or component, offer the signal multiple opportunities to be degraded. From the plugs to the wire connecting them, the end result is NOT the signal that the DVD player started with. You may not notice a huge difference, but there will be a difference. The cheapest HDMI cable will give you a better signal than the most expensive component cable.

An HDMI cable is all digital, so in absolute terms, it will provide a better signal.
For the most part, the benefit with HDMI is the ability to have zero degradation of signal for longer runs of cable. A digital HDMI cable still needs to be well shielded, so they won't be much cheaper than analogue cables.
For short runs, 6 feet or less, you won't see much difference. Start adding video switching through a receiver, and you might notice a little difference.
The biggest plus for me, is that HDMI uses a single cable for both your digital picture and digital sound. Instead of three video cables plus a fibre optic or coax for your sound, you hook up one cable.
With time, HDMI cable prices will come down, but even still, one cable is usually cheaper than four.
HDMI is also compatable with DVI (video only) which is another digital video standard. Although the adaptors are a little pricey.
For the purposes of future-proofing, HDMI is probably worth while. You may notice a slight difference, but nothing tremendous.

It is my understanding that up-scaling DVD players output HDTV formats (1080i or 720p) ONLY on the HDMI connection. Check your player's manual; you may not have a choice. Even it it does, you are better off using HDMI since there is less potential for signal degradation. You don't have to pay a lot for HDMI cables. Se http://www.ehdmi.com/hdmi.html
