Frittata is just the italian word for omelette...
Make your omelette the way you normally do...
There are different ways to do it...the simplest being to just beat the eggs, and cook in an oiled frying pan. once it is about half cooked, add whatever filling you are going to use, fold in half, lower the flame a bit and allow to finish cooking, turning over once if necessary.
Or there is the "extra fluffy"· way...
Separate the yolks from the whites... beat the egg whites untill very frothy, then beat the yolks separately, and finally add them to the whites...slowly. Cook as normal.
Then there is the spanish omelette style...beat your eggs, add the filling directly to the egg mixture (mixed veggies, cooked spinach or swiss chards, mushrooms, fried potatoes with chopped onion and green peppers, chopped ham, shrimp, tunafish, or anything else you choose (baby lima beans make a great omelette). Then place in your oiled frying pan and cook over medium flame. Do not fold it... It should be round. Turn it over by using a plate a bit bigger then the frying pan (cover the pan, turn it over, holding the plate on top of it, then slide the omelette from the plate back into the pan), and let finish cooking on the other side... Make sure it doesn't stick. Once it is on the plate, you can oil the pan a bit more before sliding it back in if you're afraid it might stick.
By the way, the spaniards (spanish tortilla) and italians (frittata) make theirs similar...In Spain we use smaller frying pans, and make the omelettes thicker.

Although veggie frittatas are often served during Lent, many recipes also do include meat.

A Frittata is the Italian way with eggs and vegetables. Originating in the vineyards during harvest, pickers would bring their left overs from the night before with a couple of eggs and some olive oil. They would make a small fire with some old vines and saute the vegetables in a little olive oil before adding the eggs, letting the whole set for a while until the egg is cooked through and sprinkled generously with fresh Parmesan cheese. A glass of wine from the previous harvest was always in order along with some good bread. A vegetable omelet is well, a vegetable omelet.

On omelet is when the egg is prepared to done in the pan before adding the ingredients on top of it. A frittata has everything mixed together and cooked that way.

1. In a 6-inch skillet melt margarine or butter. Add mushrooms, potatoes, and green onion. Cook over medium heat until potato is tender, turning occasionally.
2. Meanwhile, in a small bowl combine eggs, milk, basil, salt, and pepper. Pour egg mixture into skillet. fritta is a baked egg dish in a pan, you put the mixer in the frying pan, than bake the whole thing. then serves cut into pie portions on a plate.
And omelet, is done on the stove top, flipped to cook both sides and transfered to a dish folded in half.
