if you want plain scrambled just mix a couple of eggs with a dash of milk, salt & pepper. spray pan with cooking spray and cook turning as they cook. if you want a little variety try adding a little, diced ham, tomato, green onion, jalepeno & some cheddar cheese before cooking & scramble.

Scrambled eggs are fairly easy.
Take a non stick frying pan and put it on the stove top on about medium high (medium if your pan has a thin base)
In a bowl, crack three eggs, and mix together with a fork. You don't need to beat them to incorperate air., just mix them together well. You can also add things at this stage. (Crumbled bacon, chives, mushrooms, anything else that sounds apatising)
Pour the eggs into the pan and swirl them around until the 'curd' is formed all around, then use a soft heat resistant spatula to draw the curd into the middle. The uncooked egg will spread out, and form more. Keep moving the eggs around in the pan until you get to a slightly wobbly, loose consistancy, like custard. Take the eggs off the heat, and put them on a plate.
Don't worry about them looking slightly raw, there's still heat in the eggs and they will finish cooking on the plate, in culinary terms, this is called "Carry over"
By the time the eggs make it from the stove to the table, they'll be perfect for eating.
If you leave the eggs on too long, the protien in them begins to contract, and like wringing out a sponge, they begin to force out all the water. If you've ever been to a diner with scrambled eggs sitting in a pool of water, they're overcooked.

ok so it's really easy --
in a bowl, crack 3 eggs. Pour in a small amount of milk, then with either a fork or a wire wisk beat it up until its mixed.
Spray some cooking spray in a nonstick frying pan and heat it up to medium heat.
Add the eggs and let sit for a minute or so, then with a rubber spatula or spoon start "spooning" the egg mixture until all the liquid has formed scrambled eggs. Don't over cook or they'll get too hard. Just cook enough so that they are not loose and runny any more.
Good luck!

This is how to make really wonderful - fluffy scrambled eggs.
Break your eggs in a bowl (careful of shells), use at least 2-3 eggs per person. Then take a fork and beat these until they are mixed up and yellow. Now this is the secret to fluffy eggs. Don't use milk - use just a little (about a tablespoon) of ice cold water, and then mix your eggs.
Now - in your frying pan melt some butter then pour your eggs in and keep it on low-medium heat. Take a wooden spoon and continue to move your eggs around, scraping the bottoms and sides until they are beginning to look set.
Take off the heat - and this is the other secret - take another small pat of butter (about teaspoon) and stir into your eggs.
Now is the time to salt and pepper your eggs and serve. I taught my husband how to make eggs this way - and they are great!

Use a frying pan...put in 3 strips of bacon...cook on medium high until done. Remove the bacon and place on paper towel. Pour most of the bacon grease into a glass bowl or jar.
Tap egg on countertop or on the edge of a bowl just enough to crack the shell. Pull shell apart over a bowl to release the egg. Release the second egg into a another bowl before mixing it with the first. (Note: Sometimes eggs can be bad or have spots of blood in them. Also, be careful not to drop eggshells into the bowl.) Pour a small amount of milk into the bowl and add salt & pepper. Whip/stir eggs really fast. Pour mixture into heated greased frying pan and stir slowly.
Serve eggs with bacon, toast and orange juice or milk. Good luck.

Crack the eggs, stir them well with a fork or whisk, add a little water or milk if you want (but it's not necessary), and pour into a hot buttered frying pan. Keep stirring them as they cook. Also it's best to add salt and pepper before they're cooked.
