I had one that uses frozen green peas, cubed cheddar cheese, green onions, etc., but I can't find it now.

Green Pea Salad

2 (16 ounce) cans peas, gently rinsed and drained
1 cup finely diced cheddar cheese
1 cup diced celery
1/2 cup thinly sliced sweet gherkins
1/2 cup diced red bell peppers or pimentos
1/2 cup mayonnaise
salt and pepper, to taste

In medium bowl, combine all ingredients. Toss lightly to coat evenly.
Cover and refrigerate at least 2 hours.

Old Fashioned Pea Salad

That's the recipe I grew up with, you got everything right. The dressing is mayonaise, tossed with the ingredients you remembered and well chilled. These days, "the un-inlightened" would decrease the mayonaise by half and use sour cream or yogurt. I guess it would do, but it would not be the salad you and I remember. Sometimes she used Jack cheese and red Bermuda onion as a nice change. A wonderful recipe for a quick dinner and very refreshing. Do scald your frozen peas for about 3 minutes and drain well before mixing into the salad.

Pea Salad

1 can drained peas
1 sm. onion, diced
3 or 4 slices cheese, cut into pieces
2 or 3 heaping tbsp. salad dressing
2 boiled eggs, diced

Drain peas, put in bowl and add pieces of cheese, onion and eggs; mix with salad dressing until well mixed.

Crunchy Pea Salad

1 (10oz) box frozen baby peas, thawed
1 c. diced celery
1 c. chopped cauliflower
1/4 c. diced green onion
1 c. chopped cashews
1/2. c sour cream
1 c. ranch dressing

Combine all ingredients;chill. Just before serving, add crumbled bacon for garnish.
