When a pistachio fruit ripens, the shell changes from green to an autumnal yellow/red, and abruptly splits part way open. This is known as dehiscence, and happens with an audible pop.

They split or "smile" when they are ripe. Sometimes they are tinged reddish when fuly ripened and the distributor likes to dye them the rest of the way. If you come across pistachios that aren't smiling they are either not ripe or bad.

They open like all natural things, like flowers. It's not possible to open them as precisely as they are with any machine.

They split open when they are roasted. The heat contracts the shell, causing it to break open.
