"one-track" is very focused on a narrow topic. (Most often when someone suggests a man has a "one-track" mind, it is probably referring to sex.)
"long-winded" means someone talks too much. Like certain teachers in school would say something, then change it a little and say it again, and again, and again - that is long-winded.

Long-winded can also mean you have a lot of stamina or endurance. "Marathone runners have to be long-winded."
