I have a coworker who is going to give me their Sheiba , 7 years old. I live in Manhattan in a small one bedroom. Do you think the dog will adapt well, from living in the country?

As a breed Shiba Inus are intelligent, strong-willed, energetic dogs that require regular exercise and consistant training. Unless it's used to it, confining such a dog to a small apartment may bring out the worst characteristics in it.

Work closely with a dog trainer to help "acclimate" the dog to its new environment.

No they are wonderful dogs and gorgeous, but do not take the dog from the country and take to the city. They need to run, they love to run and been known to run off. I have a friend that had one and it would just run, run and run until it was ready to go home. They gave it to someone and it ran away and never was found. They are very aggressive dogs and very set in their temperment. Good around older children, but not smaller ones. Do research on the shiba before you get it as i feel u will be disappointed as the dog is already older and set in its freedom running ways.

Shiba's do shed and do bark. I have a very close friend that has four, and every time someone comes to the door, they sound like they are getting beating within an inch of their lives.
As long as you take them to the dog park or for nice long walks they should be okay after the initial adjustment period, but that could take a while since it's going from country to an apartment.
be patient and have fun with it. they are cool dogs.

I think that if you give the dog the exercise it needs, the small apartment will not be a problem

"Shiba" inu, from the Japanese province of Shiba. Yes, theyare great dor indoors, they don't bark, and are the right size, besides their no-sheding thing. Lucky you, they're very expensive as well.
