It has fiber and water in it. The darker the color the more vitamins it contains such as Romaine - a dark leafy vegetable, likely to have some amount of Vit A. Additionally the darker it is the more flavor it has. It is a good filler - you are satiated both by calories and by volume - when your stomach stretches, it signals that you should stop eating. Often, we eat too fast for it to register in time, but eating low calorie foods that have substance help in this area. Example, a few scoops of ice cream have plenty of calories but it doesn't 'feel' like a meal even though there is more calories than a chicken breast and a side salad or a good portion of brocoli.

RE:
What nutritional value does lettuce have?
It is actually negative is calories, it takes your body more calories to metabolize it than consume it. I think it has miminal vitamins in it too. Why do we eat it?

Iceberg lettuce is useless for us as far as nutrition goes. But romaine and spinach leaves are filled with nutrients.

Lettuce is a good source of fiber. Dark leafed lettuce also contains useful amounts of beta-carotene as well as vitamin C, potassium and certain phyto-chemicals (coumarins, flavonoids and lactucin). The glycemic index of any variety of lettuce is less than 15 which is important if you want to eat fewer carbohydrates.

If you're talking about common iceberg lettuce, the stuff most people eat, absolutely none, except for small amounts of vitamin A in the darkest green parts. It has lower fiber than most people think, too, and doesn't take more calories to digest that you get from eating it. I suppose that if yu need the extra water in your diet, lettuce is a lower-calorie source than melons...
Dark green, leafy lettuces are better for you. They have more vitamin A, and actually have some taste, too.
I can't think of any reason to eat iceberg lettuce other than for the texture that it gives on burgers or sandwiches and such.

Roughage is good for your colon and digestion. Aids in moving things through. Leafier lettuces are better than something like iceberg.
