I just want to get an idea how long you can do that without making any possible food poisioning. The last thing I need is to get my family sick!!! :"(

Marinating beef can be tricky depending on the cut of meat and how it will be cooked. A roast should marinate for a min. of 3 hrs. and a max. of 24 hrs. The way I do it is to place meat in a gallon sized Ziploc bag, add marinade ingredients, then refrigerate until ready to cook. The depth of the marinade's penetration is proportionate with the amount of time the meat is marinated (more time=more flavor).
You have to cook all meat to the recommended core temperature to be safe. Beef's core temperature is 165 degrees. This temperaturewill not fully cook the meat, so, unless you want beef tartar (a raw meat delicacy) you should do fine with normal cooking.

let me clear up a couple of errors;
Choklitjazz beef temp of 165 is for ground beef not roasts, 145 internal temp will result in a medium rare roast and meet the requirement to cook your food above 140 F
There are two ways that biological organisms cause food borne illness:
Food infection and Food intoxication
Food infection is the result of living organisms reproducing exponentially and your body not liking the result. Cooking kills the organisms
Food intoxication is the result of those organisms releasing toxins into the food as a result of their normal life cycle
FOOD INTOXICATION CANNOT BE COOKED OUT!!!!
So if you really need to marinate something follow these rules
follow choklitjazz advice re; plastic bags but put the bag in a lexan container
place the marinating vessel on the bottom shelf of your refrigerator- that way if it drips it won't cross contaminate other foods
toss the marinade when you're done
under no circumstances leave the meat out on the counter.

Overnight. Before you go to bed, SEAL it in a container. It will be ready for cooking the next day. Any more than that is pushing it, though the bacteria will be cooked out anyway if you get the core temperature up enough.

As far as marinade itself, 24 hours is probably the max you want to marinade beef.

If it's in the fridge you can keep it in there several days. I am assuming that you are cooking it after marinading it The cooking will kill any bacteria that may form in the meat making it safe even after a week but if you wait too long the texture may suffer. I make a corned beef roast that I rub with dry seasoning and put in the fridge for 5 days and it is perfectly safe after cooking.

I have and answer and a question. Did you refrigerate the meat while it marinaded? You can usually marinade meat from 1 hour to overnight. You just want to impart the flavor of the marinade not completely overtake the meats own flavor. Hope I helped.
