I wish I had an open rustic beam ceiling. You have a lot of opportunities there. If you're going for a rustic or country look, old oil lanterns hanging down would look neat. Also...hanging plants (whether real or fake) will really accent the beams. Look into log cabin sites to see how they decorated some of the homes.
PLEASE...don't paint the beams! It would ruin their character.

They don't need to be hidden or decorated - they are a decoration in and of themselves - just work them in by using a rustic or casual style in that particular room. Most people - like me - would LOVE to have them.

Oh my god, please don't paint or overboard them like someone else suggested.
I have the same ceiling as I live in a cotton mill they converted to condo's.
I just put some nice plants and a few rustic lanterns up. I also wrapped nice white rope lights around them. I wouldn't alter the natural wood.

If it needs to be inspected, you need to submit submit a design. The inspectors will not let you build something out of code & then reject your work ( hope not) Since you have "raceway" in mind would get hold of a "Wiremold" catalog or go online & select each type of fitting & raceway you like . Hand a simple drawing w/ copies of the catalog pages to the inspector. If that does not do it for him he's an absolute prick. They even have transitions from "normal" wiring boxs & cable to their own designs which are all used for "surface mounted" applications. Being enclosed in a " raceway " may get you off the hook as far as where & how you can run the cables. Check code ref again & see if it applies to exposed cable. Specified the stuff all the time on old job & they may still have people you can talk to. Best regards

If you do not like the beams to stand out, then try painting them the same color as the ceiling. Some people really like the wood of the beams to stand out. In fact if you painted them and ever wanted to sell your house it would probably detract from the price.

Get garland leaves and wrap it arround the beams for a "garden" feel. Or use other type of materials, depending on the look/feel you are going for.
