If you have boneless chicken it takes less time. but boil the chicken with a couple cloves of garlic a stalk of celery & oregano & salt & pepper the celery & oregano give the chicken a good flavor. while chicken is cooking, ;you can prepare the other things i.e. grating the cheese, shreading the lettuce ect

This may seem unorthodox but it works and came from a great source--Cook's Illustrated. I've tried it and it really works. Cut up the chicken into 1 to 2 inch strips and then simmer it in the enchilada sauce! Strain the chicken out after 5 minutes of simmering and shred it. It will be perfect--moist and delicately seasoned. Take the shredded chicken and add it to the recipe. This really does work and it enhances the sauce too.

This is my fave enchilada recipe:
2 lbs. chicken breast
10 tortillas
3 cans green chile sauce
Boil chicken breasts for 30 minutes. Drain water. Use 2 forks and pick at the chicken, pulling it in strips and "shredding" it until all the chicken is done. Put chicken in a bowl and mix with 1 can green chile sauce. Dip tortillas in another can of green chile sauce, then fill with some chicken and roll up, placing seam side down in a 13 x 9 pan. When finished, pour 3rd can of chile sauce over tortillas, top with shredded cheese and bake for 30 min! MMMMMMM MMMMMMMM DELISH!

For chicken enchilada filling simply boiled the chicken until done (takes very little time), cool and remove any skin, bones or excess fat and tear apart. Dice some red & green peppers and onions and sautee in butter until translucent then add the torn or shredded chicken, enchilada sauce and any other spices you'd like and let simmer about 20 minutes uncovered.

If you just need shredded chicken, you can totally microwave it! Just put the chicken breasts on a plate and cover with plastic wrap. Microwave for 5-10 minutes or until it's no longer pink in the middle. Just shread it with a knife and fork before you combine with the enchilada sauce.

Boil it in water, with either a little bit of salt or chicken boulion, then shred it. That is how I do it when I make chicken enchiladas, and it works pretty good.

I toss my chicken breasts - usually frozen from a big cheap bag - in the microwave to cook them. After they've cooked, I shred them in a food processor. If I want to get really fancy, I'll cook the shredded meat with some chopped onion and some tomatillo sauce to give it a nice flavor.
I'm no Julia Child, but nobody's died from my cooking yet.

Just boil in lightly salted water.
