I couldn't agree more, they have a taste all of their own. My theory is we are too fussy. When we fry an egg we always use a clean pan and new oil. I strain the oil from all frying let it cool and use it again, man! unhealthy but it sure tastes good.

Its a magic ingredient called whiting. The raw chips are dipped in this before packaging and delivery to the Chip Shop. I don't know what's in It, It's a trade secret but the chips keep longer before cooking and as you say, taste better. Next time your in the chip shop, ask the guy about the whiting on the chips. PS Try Iceland , they do a pack of chunky chips for 75p that I believe are dipped in the same magic ingredient.

I'll bet that "Katey" has it right. When we cook at home, we often look for products that are "better" for our health, without knowing it. A fast food restaurant, however, needs to think about how attractive the product smells, tastes, looks, etc.

We all know that fat, in foods, is the source of much of the flavors we love. But most of us don't cook that way, anymore.

Really, when was the last time you picked up a brick of lard at the grocery market?

i think it depends on the diffrent chip shop u go to i know of some who make terriable chips and other who make fantastic chips.. I also think it must be the kind of fat they use to cook them...my parents say at one time chips where cooked in pig fat and made the best chips.

I know what a "chop shop" is, but what's a "chip shop"? Is it where you get fish and chips? Are you British, or what? We don't have chip shops in the USA.

devoid of doubt chippies chips are far and above more beneficial valuable than those stupid twiggy, dried up sawdust like garbage they promote in Mc garbage, the ideal chips are first blanched and positioned to one part and allowed to dry then fried in warm oil or more beneficial valuable nonetheless lard or purple meat dripping, drained and served piping warm, once eaten in no way forgotten. also chippies oftentimes opt for the potatoes they promote very intently so that you come back lower back for more beneficial

Whiting??? The best chips are the ones I used to make in my chip shop....no chemicals just water to wash them and fried in beef dripping. I tried lots of healthier frying oils but the customers hated them so it was always beef fat for me......

MMmmmmm you are so right. Thick and greasy and fluffy inside, and all the crunchy bits at the bottom are the best!!

I think they are so good as they tend to be cooked in lard, but I try not to think about that! I'm really hungry now.
