* 225g (1 ½ Cups) Strong plain white flour or plain wholemeal flour
* 1 level teaspoon salt
* 1 level teaspoon sugar
* 15g (1 level tbspoon) soft tub margarine
* 1 sachet (6g) easy blend dried yeast or fast action easy blend dried yeast
* 150 ml (2/3 cup) warm water - NOT HOT!
For Decoration:
* 1 small egg beaten with a little milk
* currants
* sesame seeds
* poppy seeds

# Put the flour in the mixing bowl and add the sugar and the salt.
# Add the margarine and rub into the flour using your finger tips.
# Add the dried yeast and stir into the flour mix
# Add all the water at once to the flour mix and stir together using the wooden spoon.
# Use your hands as the dough gets tough and when it leaves the sides of the bowl clean (add a little more flour if it is too sticky), put the dough onto a floured surface.
# Now the hard work! The dough will feel tight and lumpy and you must 'knead' it to make it smooth and stretchy. Push your hands into the dough, gather it back into a ball, turn it slightly and then repeat. Do this for about 5 minutes until the dough feels smooth.
# Shape the dough into your own design and place it on the greased baking tray.
# Cover the shape with the oiled cling film to stop it drying out and then put the tray in a warm place so that the yeast can work and make the dough rise.
# Set the oven to 230°C/450°F/Gas Mark 8
# When the loaf shape has about doubled in size (after about 30 minutes), remove the cling film and place the tray in the centre of the oven.
# Bake the loaf for 20-25 minutes. It should be golden brown and sound hollow when tapped underneath.
# Put the loaf on a wire rack to cool

-3c ALL PURPOSE FLOUR/
1t salt
1T sugar
2T oil
about 10 oz water (might not need it all)
1 pkg yeast ( i prefer the slow rise for better taste)
__________
put about four oz water in a cup wiith the sugar and yeast and let set till it turns bubbly and foams a bit. add the 4 0z h2o to a plastic bowl and put the flour salt and oil in... stir a bit with a fork, and add another 4 oz h2o.... the stuff will try to form a ball if youre still stirring. add another 1 oz and you should have a single ball of bread dough.....let this set for about an hour in a warm place with a towel over the bowl... at this point you can try kneading the bread dough till its really smooth. butter your hands and tear off chunks of dough about the size of a walnut, roll them till you have round little balls and place two into a muffin tin sprayed with bake release or buttered...let rise till the dough is abouit 1/4 inch over the top of the muffin tin and place in a preheated 350 degree oven for about twenty minutes ...
this makes a dinner roll that pulls apart to make it easy to butter at the table, you can use 3 little balls to make clover leaf rolls, or one large one... to make a simple roll..... butter the top when you take these out of the oven and let them set till they are cool enough to handle... if you prefer really tiny rolls just place them onto a cookie sheet touching after you have rolled them into walnut size balls with buttered hands...bake times may vary seven minutes , they smell really good about the time to take them out... to add sesame seeds or poppy seeds, brush the tops with egg white and sprinkle with the seeds just before they go into the oven...

Buttered Sweet Potato Knot Rolls:

1 package dry yeast (about 2 1/4 teaspoons)
1 cup warm 2% reduced-fat milk (100° to 110°)
3/4 cup canned mashed sweet potatoes
3 tablespoons butter, melted and divided
1 1/4 teaspoons salt
2 large egg yolks, lightly beaten
5 cups bread flour, divided
Cooking spray

Dissolve yeast in milk in a large bowl; let stand 5 minutes.

Add sweet potatoes, 1 tablespoon butter, salt, and egg yolks, stirring mixture with a whisk.

Lightly spoon flour into dry measuring cups; level with a knife. Add 4 1/2 cups flour; stir until a soft dough forms.

Turn dough out onto a floured surface. Knead until smooth and elastic (about 8 minutes); add enough of remaining flour, 1 tablespoon at a time, to prevent dough from sticking to hands (dough will feel very soft and tacky).

Place dough in a large bowl coated with cooking spray, turning to coat top. Cover and let rise in a warm place (85°), free from drafts, 45 minutes or until doubled in size. (Gently press 2 fingers into dough. If indentation remains, dough has risen enough.) Punch dough down. Cover and let rest 5 minutes.

Line 2 baking sheets with parchment paper. Divide dough into 24 equal portions. Working with 1 portion at a time (cover remaining dough to prevent drying), shape each portion into a 9-inch rope. Carefully shape rope into a knot; tuck top end of knot under roll. Place roll on a prepared pan.

Repeat procedure with remaining dough, placing 12 rolls on each pan. Lightly coat rolls with cooking spray; cover and let rise 30 minutes or until doubled in size.

Preheat oven to 400°.

Uncover rolls. Bake at 400° for 8 minutes with 1 pan on bottom rack and 1 pan on second rack from top. Rotate pans; bake an additional 7 minutes or until rolls are golden brown on top and sound hollow when tapped.

Remove rolls from pans; place on wire racks. Brush rolls with 2 tablespoons butter. Serve warm or at room temperature.

Yield: 24 servings (serving size: 1 roll)
