There is actually surprisingly a long technical answer to this...

But here's the rundown in my own words. Basically, the seeds can cause it through a bittersweet compound of Cotyledon (an indicator of bitterness).

You CAN however, buy something called "Burpless Cucumbers". Check out the site listed below.

Oh, also- I've seen suggestions not to eat "older" cucumbers and also to cut out the seeds.

I personally have never had a problem with cucumbers and burping, but if it is something you are worried about, check out the link.

if you leave some of the skin on it helps to keep you from burping there is something in the skin that offsets what ever is causing you to burp

not particularly, but there are days that for some reason it seems that everything makes me burp

It's the skin and the seeds. If you peel them and slice them up thin (the way the Chinese do) then you won't have that problem.
