We had yummy burritos!
With cheese, lettuce and tomatoes, salsa, guacamole, sour cream...MM mm! I'm going to dig up some leftovers right NOW!

You have all made me hungry! Taco casserole sounds good. How about taco salad?
Lettuce, tomatoes, green onion, &everything else you like in salad;
Ground beef, seasoned with red pepper, chili powder, and cumin;
Ranch-style or homemade pinto or black beans;
Grated cheese;
Catalina Dressing;
Fritos!
Mix together and serve with salsa, guacamole, and sour cream.

This is what I had

It is a lot like a lasagna, only Mexican-style! Serve like a pie and garnish with sour cream, salsa, lettuce and tomato.
INGREDIENTS:
2 pounds ground beef
1 onion, chopped
2 teaspoons minced garlic
1 (2 ounce) can black olives, sliced
1 (4 ounce) can diced green chili peppers
1 (10 ounce) can diced tomatoes with green chile peppers
1 (16 ounce) jar taco sauce
2 (16 ounce) cans refried beans
12 (8 inch) flour tortillas
9 ounces shredded Colby cheese

DIRECTIONS:
Preheat oven to 350 degrees F (175 degrees C).
In a large skillet over medium heat, saute the ground beef for 5 minutes. Add the onion and garlic, and saute for 5 more minutes. Drain any excess fat, if desired. Mix in the olives, green chile peppers, tomatoes with green chile peppers, taco sauce and refried beans. Stir mixture thoroughly, reduce heat to low, and let simmer for 15 to 20 minutes.
Spread a thin layer of the meat mixture in the bottom of a 4 quart casserole dish. Cover with a layer of tortillas followed by more meat mixture, then a layer of cheese. Repeat tortilla, meat, cheese pattern until all the tortillas are used, topping off with a layer of meat mixture and cheese.
Bake for 20 to 30 minutes in the preheated oven, or until cheese is slightly brown and bubbly.

Taco Casserole!! Good stuff!

Brown 2 lbs. ground beef with 2 pkgs taco seasoning. Drain and spread in bottom of casserole dish. Layer with the following: salsa, then sour cream, then shredded cheese, then Tostitos, then salsa again and top with more shredded cheese. Bake at 350 for 35-45 minutes, until bubbly!

Salmon steaks sprinkled with lemon pepper seasonings and baked for 20 minutes at 350

Can of potatoes drained and mixed with little milk and some cheese

I have to admit- I had pizza for dinner- it was raining too hard and i didnt feel like running to the store to pick up anything to make. now the night before that I had barbecued some chicken, ribs and brats, and we had spaghetti with it. I didnt eat the meat so i settled on a yummy potato that I threw on the grill....

Yummm, your question has given me a hankerin' for some Mexican food...I think that shall be my lunch destination for today! Last night, I made a sandwich wrap with sliced turkey, lettuce, Cheddar cheese, bacon, honey mustard, and ranch dressing...mmm!

mmmm - I had mexican for supper as well! I had beans, a taco, a burrito & rice - combo # 17!! lol Since we were celebrating my daughter's birthday, they brought her a fried ice cream & everybody sang happy birthday - in Spanish!! IT was a great evening - so sorry I don't have leftovers too!!!! Enjoy!!!
