Leuconostoc mesenteroides is used in sauerkraut, streptococcus salivarius ssp thermophilus and lactobacillus bulgaricus are both used in yogurt and acetobacter is a genus used in vinegar production. Other than that I don't know.

what supermarket products? there are some living enzymes in yogurt though :)

how bout yeast, sacromyces cerevisea ( sp. check me!) Its in beers, malts, etc. note that cerevisea is derived from the latin word, which we see today in spanish as cervesa!
