I'm just using the microphone to record my voice so I don't need stereo. I used the built in Windows recorder, but it would only do a maximum of 60 seconds. I want to record stuff as long as eight minutes nonstop.

Try Adobe Audition.

The amount of record times is based on how much storage you have on your PC. It even has lots of great editing features and effects you can use such as pitch shift, delays, reverse pitch and all sorts of other things.
