Cook it on high, medium or low heat ? I like mine so its not bloody /medium.

You should fry some chopped onions and garlic in a pan (low heat) take them out of the pan, then turn the heat up - *sear* the fillet (ie- cook the outside layer of meat whilst keeping the inside pink) For medium rare, on top heat - probably for about 4-5 minutes. Then turn the heat off, add the onions to the pan and serve.

An a general rule for tasty pan fried steak.

For a better taste, use a fattier cut of meat. Fillet is extremely lean and lacks moisture & taste when overcooked. (Well done).
I recommend Sirloin (about same price) or Rump (best medium)

Season the meat - tastes better, does NOT draw out moisture.
(Ask the French...) And there is no such this as 'sealing the meat', old wives tale!
Add a small amount of oil - just enough to coat, your not deep frying here!!

RARE = High heat, turn ONCE.

MEDIUM = High heat, turn ONCE.

WELL DONE = Medium heat. Turn twice.

Allow to rest for two minutes before serving.

I would sear the outside of the fillet in a pan over a very high heat before transferring it to a medium oven til done to your liking

Start off by cooking it on both sides very quickly on the highest heat to seal in the juices, then turn down the heat and cook both sides for approx 4minutes (depends on the thickness of the steak) dont turn it any more than u have too as this lets all the juices run away. But sealing any meat first is the secret to keeping it moist and juicy.

what you do is you beat the fillet first with a tenderiser then you add butter and onion and fry it then you cook the meat on a low heat and cook it slolwy that way it nis sofgt and deliciopus to eat try adding
whilsyt you are cooking it half a glass of ted wine leave it for 25 mins that will make a nice gracy with it . to it when you cook the staek and by you will have most tasteist steak evr also have it with oven chips and vegetablke for that lovely meal hmmmm souinds nice.

i'd go for a medium heat pan then for a pink/medium steak about 3-4 minutes on each side should do it. Hope its nice.

I would cook it on a medium heat, but my tip is not to add oil to the pan but to brush or rub a little oil directly on to the steak.

Medium to low heat turn regularly until the blood stops, then it is sealed and leave it cooking until its how you want it, turning still. Enjoy.

would cook it on medium heat myself, otherwise it would burn before cooking all way through, but cook on medium long enough for heat to fully penetrate steak so you meal is not left bloody.
