I have been diagnosed as a Celiac and wondered if there are any good recipies?

Try at celiac.com first, but I've found that the mixes available, like Pamela's bread mix (available through Amazon in bulk quantitiies produces a consistently good bread) that my 7 year old son enjoys. It toasts really well and did not go moldy over 4 days. You can also search for flourless choc cake recipes-these are wonderfully decadent!

You could try the bbc.co.uk website and go to the food section, they have lots of recipes and I think you can specify Gluten Free.

Chicken Broccoli Alfredo

8 oz. ( 1/2 bag) Tinkyada spaghetti, cooked according to directions and drained (#530)
2 Tbs. olive oil
1 lb. boneless, skinless chicken breast, cubed
Salt, pepper, and garlic powder to taste
1 pkg Cook-in-the-Kitchen Welsh Potato Soup (#258)
4 1/4 cups 2 % milk
1/2 cup grated Parmesan cheese
1 cup broccoli florets fresh or frozen, micro- waved for 4 min.

1. In a skillet, warm olive oil over medium heat. Sauté chicken until browned on both sides. Season with salt, pepper, and garlic powder. Remove with slotted spoon.
2. Heat milk in skillet and stir in soup mix. Let simmer, stirring , for 3 min.
3. Add broccoli and chicken and return mixture to simmer. Add spaghetti and cheese.
4. Toss and serve or transfer to a 9-x-13-inch pan and refrigerate to serve later.
5. To reheat: Microwave (3-5 min.) or bake 15 min. at 350 degrees.

Impossible Savory Vegetable Quiche

¾ cup shredded Monterey Jack Cheese
½ cup sun-dried tomato flakes
¾ cup shredded cheddar cheese (sharp or mild)
1 cup Gluten-Free Pantry Pancake & Irish Soda Bread Mix (#100)
¾ cup cottage cheese
1 ¼ cups milk
¾ cup onion, chopped
4 eggs
½ cup red & green bell peppers
Salt & pepper to taste

1) Preheat oven to 350 degrees. Lightly grease a 9-inch pie pan. Sprinkle the pan with 1 tablespoon of pancake mix and set it aside.
2) In a medium sized mixing bowl toss together the shredded cheese, cottage cheese, onions, peppers and tomatoes. Spoon this mixture into the prepared pie pan.
3) In a separate bowl, whisk together the baking mix, salt, pepper, milk, and eggs till smooth. Pour the liquid mixture over the filling.
4) Bake the pie in oven for 40 to 45 minutes, until a knife comes out clean. For easiest slicing, let the quiche cool for 5 to 10 minutes before serving. Yield: 1 pie, 6 to 8 servings
