i love greens but mine rarely come out as good as the ones ive had made by grandmothers PLEASE HELP!!!!

First find some nice pork meat such as ham hock
or you can use bacon for seasoning

clean your greens really well and put in large dutch oven pot....don't add much water cause water will cook out of your greens.
Put in you seasoning meat with salt...(secret?? add about 2 teaspoons of sugar to cut the bitterness of the greens)
cover and let them steam over medium heat. Check every once in a while to make sure they have a little water in them.
usually takes about an hour to cook or til tender.

Here's the old southern way I learned to do them.....Buying fresh greens is always the best way to start. Clean (wash them) in the sink twice with clear water (no soap). Shred them with your hands into pieces the size you would like. In a large pot, sear several slices of jowl bacon (available at the supermarket). Make your slices no more than 1/4 inch thick. Brown these in a bit of vegetable oil. Save all the oil that is created in the pot.
Put your greens in the pot with the meat and oil. Add seasoned salt, (to taste), a bit of ground red pepper flakes, and some garlic powder. Cover them with water and start the cooking process on a medium heat. Let them boil at least 3 hours, checking about every hour to insure your water level is still high enough. The trick to greens is that folks normally don't let them cook long enough. FYI - Glory greens now has fresh packaged greens, which are already shredded (but still need to be washed). i like to boil them down a little bit, add sauce and some cut up chunks of chicken, or whatever meat you like, you can also add them to cavatelli, and add beans of your choice, i like cannalini beans. season to taste. add fresh garlic too. i do this with escarole, swiss chard, and dandelions. yummy. you can also make just soup with them, broth, some pastina or rice, and add other veg, like carrots, too.

first you boil them . then you fry in grease of your choice. bacon grease is good also
