They fill the bags up half full with air to create a barrier that protects the chips, so when they are getting delivered and un-packed they don't get as damaged. The air prevents the chips from crushing or crumbling..... it has nothing to do with taste, it's so that when you buy a chip bag you actually get chips and not crumbs...

If the manufacturer didn't put air inside the bag of chips it would arrive even more crumble than it already does. The air act as a barrier, during shipping, to prevent the contents inside to be crushed.

It's not air, it's nitrogen. Air would make the chips go stale quicker. And when they fill the bag at the plant, it really is full, it settles out on the way to you.
