I have the same thing with my mother-in-law. I haven't thought of anything, except helping her cook and giving her recipe books as presents (had some effect).

Just pick out the bits you can eat without throwing up and ignore the rest. Say self-deprecatingly that you're just a really fussy eater, and always have been. Tell her it used to drive your mother nuts.
I think the concept of giving her recipe books as gifts is a great idea. Also perhaps become a vegetarian when you visit. At least there's no gristle in vegetables.

Do you have allergies and intolerances that she is unlikely to take into account when preparing meals?

Accept only small servings and eat only a little bit. Talk a lot or something. Otherwise it will be quite rude no matter how sick the food is.

go to a food recipe site and look up what your aunt makes or just look up some simple recipes and offer to help her prepare dinner. it will give you a bonding experience and then you know you will be able to eat the food. even if you can or can't cook it's fun to experiment, and there's no better person to do it with than family.

Don't be so polite. You are not the only one that doesn't like her cooking so she probably is aware of it even if she does not want to admit it to her self. Just tell her but not in a mean way.

why dont you cook ?? u can always tell her that u want to help her in kitchen.U make one dish daily..let her make the other.so u can have lil portion of her dish n enjoy the dish which u will make.if u dont know to cook...start with the simplest recipe book.start making easy ones first. show other recipes to aunt also.

Tell her you just ate before visiting and cannot possibly eat another bite of food. Repeat as necessary.

bring some side dishes and eat those, put one item of hers and put in napkin, then excuse your self to the bathroom and dump the napkin into the toilet. She will never know.

just join her in the cooking. this way you will be of help to her and she will appreciate it and you can somewhat control her cooking
