Sweet Potato Pancakes

INGREDIENTS:
1 1/2 cups sifted all-purpose flour
3 1/2 teaspoons baking powder
1 teaspoon salt
1/2 teaspoon ground nutmeg
1 1/4 cups mashed cooked sweet potatoes
2 eggs, beaten
1 1/2 cups milk
1/4 cup butter, melted
PREPARATION:
Sift dry ingredients into a mixing bowl. Combine remaining ingredients; add to flour mixture, stirring just until dry ingredients are moistened. Drop by tablespoons onto hot greased griddle or skillet and fry, turning once, until browned on both sides.
Makes about 24 pancakes.

Sweet Potato Pancakes #2: Uses grated raw sweet potatoes

Ingredients:
2 medium sweet potatoes, peeled and shredded
1 egg
1/4 cup brown sugar
3 tablespoons all-purpose flour
1 teaspoon vanilla extract
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1 teaspoon ground ginger
4 teaspoons vegetable oil

In a medium bowl, combine the egg, vanilla extract, and sweet potatoe shreds.
Add the brown sugar, flour, cinnamon, nutmeg and ground ginger to the mixture, mix until just combined.
Form the mixture into 4 equal size patties or however big you like your pancakes to be.
Heat the oil in a large skillet.
Add the patties in batches to the hot oil and fry until they are firm and brown on both sides or about 3-5 minutes.
Serve.

Boil 5 medium sized sweet potato, mash or blend the cooked sweet potato into a fine paste, add a pinch of salt, 1 cup of cream or milk, 1/2 cup of self rising flour. Mixing everything into a smooth paste (note: texture must not be watery, add flour to thicken if required). Cook the batter as you would for normal pancakes.
