First of all I'd like to say that I'm a believer (although not Christian), but I'm also a thinker. If whatever I say below offends anyone I am truly sorry. I mean no harm.
Adam and Eve were human. They had no ethnicity. Since they were the first humans, ethnicities didn't exist yet. Ethnicities are a result of evolution (evolution being just another wonder of God).
Christian art is usually wrong in the sense that it is inaccurate. Adam and Eve were not Caucasians. Jesus probably had a rather Arabic look instead of a Caucasian look, and the clothes worn by the biblical figures in paintings are wrong as well. Most Christian art originates from the middle ages, and the artists have given the figures middle aged European clothes and looks. Which is obviously wrong, or, at the least, highly improbable.

The bible gives no indication on the subject.
Genetics suggest that all people now alive are descended from approximately 9 women who at the time were living in what is now ethiopia. The people with the closest genetic link to these women still live there and are black. This would suggest that the original men and women were black, therefore you could say that Adam and Eve were black.
On the other hand, if you use the pseudo-biblical calculations on time mentioned in your other question, they only existed about 6000 years ago, and since the people who claim direct descent (jews and muslims) are all aramaic/arabic peoples, and this period is not long enough for significant genetic change, you could assume that they had a typical middle-eastern appearance.
I personally consider myself a Christian but I do not believe in the literal accuracy of the Genesis story. The funny thing is that those who do believe that it's the received word of God, yet insist in making stuff up to try to make it fit in with other data. For example it just doesn't say when Adam lived or what colour his skin was. Surely if the Bible comes from God and God wanted us to know he'd have mentioned it? And why doesn't the bible mention God going around burying false fossil remains to try to make us think that life on earth started a lot earlier than 6000 years ago?

I don't think anyone knows their original ethnicity...maybe because all ethnicities eventually came from their descendents. Maybe they're a compilation of all ethnicities. Ethnicities weren't created until the Tower of Babel, when God gave the groups of people different languages so they couldn't understand each other. The different groups went their separate ways and developed their own cultures. Some were "burnt black by the sun." And so all ethnicities probably were created from the groups that God created during the construction of the Tower.

I believe their skins were brown because that is the colour of the first people [ Homo Sapiens ] on Earth. Blacks , whites and other ethnic origins appeared on this Earth at a later time. Blacks were the first among Homo Sapiens to stand up-right on two feet .

Without any doubt they were from Africa, so their skin color would be very dark. According to the out of Africa hypothesis (which is supported by genetics), the people that moved to Northern climates eventually evolved to have lighter skin colors. The advantage to having a lighter skin color is the ability to absorb sunlight which allows us to produce vitamin D. Unfortunately it comes at a cost because of the increased susceptibility to skin cancer because they have lost the protective ability of melatonin.

who really cares what "race" they were, it really doesn't matter we all are human and come from the same family. I can answer part of your questions though ...about where did the rest of us come from...we were born...Not being snobby seriously..Rebecca was pregnant with twins and the babies fought inside of her when she inquired to God about it he told her that two nations were in her womb..Notice Esau means "Red" because he had reddish skin....in the telling of the story it is pointed out for a reason, evidently no one else before him was Red skinned.
