Brownies with Fudge Icing:

2 (1-ounce) squares unsweetened chocolate
1 cup butter
4 large eggs
2 cups sugar
2 tablespoons vanilla extract
1/8 teaspoon salt
1 cup all-purpose flour
1 cup chopped pecans
Fudge Icing

Cook chocolate and butter in a heavy saucepan over low heat until melted, stirring occasionally. Remove from heat, and cool mixture slightly.

Beat eggs and next 3 ingredients at medium speed with an electric mixer until thick and pale (about 5 minutes). Fold one-third of chocolate mixture into egg mixture. Fold in remaining chocolate mixture, flour, and pecans. Pour into a greased and floured 13- x 9-inch pan.

Bake at 350° for 45 minutes. Pour warm Fudge Icing over hot brownies. Cool on a wire rack.

Yield: 2 dozen

Triple Chocolate Brownies
All the chocolate bases are covered with this attractive and tasty brownie treat.

Ingredients:
Brownies:
1/3 cup butter
3 squares unsweetened chocolate
2/3 cup flour
1/2 teaspoon baking powder
1/4 teaspoon salt
2 eggs
3/4 cup sugar
1 teaspoon vanilla
1 cup white chocolate chips


Icing:
4 oz. milk chocolate
3 tablespoons butter



Directions:
Brownies:
Melt butter and chocolate together. Set aside to cool.


n a small bowl, combine flour, baking powder and salt.


In a large bowl beat eggs. Blend in sugar. Add chocolate mixture and vanilla. Stir in flour mixture, and white chocolate chips.


Pour into a greased 8 inch square pan. Bake at 325 degrees F. for 18 to 20 minutes. Cool.


Icing:
Melt milk chocolate and butter together.


Spread over the cooled cake. Cool and cut into squares. Store in refrigerator.

Outrageous Brownies

Ingredients
1 pound unsalted butter
1 pound plus 12 ounces semisweet chocolate chips, divided
6 ounces unsweetened chocolate
6 extra-large eggs
3 tablespoons instant coffee powder
2 tablespoons real vanilla extract
2 1/4 cups sugar
1 1/4 cups all-purpose flour, divided (1 cup for batter and 1/4 cup in the chips and nuts)
1 tablespoon baking powder
1 teaspoon kosher salt
3 cups diced walnut pieces

Instructions
Preheat oven to 350 degrees F. Grease and flour a 13 by 18 by 1 1/2-inch
sheet pan.
Melt together the butter, 1 pound chocolate chips, and unsweetened chocolate on top of a double
boiler. Cool slightly. Stir together the eggs, instant coffee, vanilla and sugar. Stir in the warm
chocolate mixture and cool to room temperature.

Stir together 1 cup of the flour, baking powder and salt. Add to cooled chocolate mixture. Toss the
walnuts and 12 ounces of chocolate chips with 1/4 cup flour to coat. Then add to the chocolate
batter. Pour into prepared pan.

Bake for about 30 minutes, or until tester just comes out clean. Halfway through the baking, rap the
pan against the oven shelf to allow air to escape from between the pan and the brownie dough. Do not
over-bake! Cool thoroughly, refrigerate well and cut into squares.

I work on a tour boat in Alaska and the brownies we make are world famous. People say that they heard about our brownies before they even got to Alaska. We cook them right there on the tour and we usually have to make 4 batches. They just can't say no to that irresistible smell. Our little secret is that we use Ghiradeli brownie mix and just add some special goodies...like peanut butter chips or caramel, heath bits, m&ms, pecans or extra chocolate chips. The best chocolate chips are guittard chocolate chips!!! Try em and tell me what you think!

BROWNIES

2 ounces unsweetened baking chocolate squares
1/3 cup shortening
1 cup sugar
2 eggs
1/2 teaspoon vanilla extract
3/4 cup all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon salt
1/2 cup nuts, chopped

Heat oven to 350 F. Heat chocolate and shortening in 2-quart saucepan over low heat, stirring constantly, until melted; remove from heat. Mix in sugar, eggs and vanilla. Stir in remaining ingredients. Spread in greased pan 8x8x2 inches. Bake until brownies begin to pull away from sides of pan, 30 to 35 minutes. Cool slightly. Cut into about 2-inch squares.
Fudgy Brownies: Substitute 1/2 cup butter for the shortening.

Increase vanilla to 1 teaspoon. Decrease flour to 1/2 cup and salt to 1/4 teaspoon. Omit baking powder. Spread in greased square pan, 9x9x2 inches or oblong baking dish, 12x7 1/2x2 inches. Bake 20 to 25 minutes.

(9x13 bake for 30-35 minutes).

Serving Size: 12.

Kahlúa® Brownies
½ cup butter
3 ounces unsweetened baking chocolate
1 ½ cup sugar
3 eggs
1 ½ cup all purpose flour
½ teaspoon baking powder
½ teaspoon salt
1/3 cup Kahlúa®

Heat oven to 350ƒ F (180ƒ C)
Grease an 8 X 8 inch cake pan.
Mix together the flour, baking powder, and salt, and set aside.
In a saucepan over low heat, melt the butter and chocolate, stirring frequently until smooth.
Remove the saucepan from heat, and let cool.
Beat eggs and sugar until light. Mix in cooled chocolate mixture and Kahlúa® flour mixture. Spread in the cake pan and bake for 40 minutes or until a toothpick inserted in the middle comes out clean.
Cool slightly, then brush the top with about 1-2 tablespoons of Kahlúa®.
Cut into squares.

3 eggs, separated
¾ cup granulated sugar
¼ cup butter
1 cup light brown sugar, packed
2 ¼ cups all-purpose flour
½ cup unsweetened cocoa powder
1 ½ teaspoon, baking soda
¾ cup strong cold coffee
¾ cup Kahlúa®
Kahlúa® Frosting

Grease & flour two 9 inch cake pans.
Preheat oven to 350† F.

Beat egg whites until frothy; then beat in sugar until stiff peaks form. Set aside. Cream butter and brown sugar until fluffy. Beat in egg yolks, one at a time. Sift flour, cocoa, baking soda together. Add to creamed mixture alternately with coffee and Kahlúa®: blend well. Fold egg whites into batter. Pour into prepared pans.
Bake 30-35 minutes, or until done. Cool 10 minutes. Invert on wire rack; remove pans. Cool before frosting. Serves 10-12

Kahlúa® Frosting:
In large bowl, cream 6 tablespoons. butter and 1 pound sifted powdered sugar. Add 3 tablespoons unsweetened cocoa powder, 3 tablespoons Kahlúa® and 2-3 tablespoons hot coffee; beat until smooth.

buy the "martha white walnut brownie mix" kind and follow their exact direction. it's what we use, and our fav. don't over cook or it'll get hard. store it closed tight.
