Chewy Chocolate Chip-Nut Bars
1 cup butter, softened (or use half butter and half margarine)
1/2 cup sugar
1 cup brown sugar, divided
1 tablespoon water
2 tablespoons maple extract
2 egg yolks
2 cups flour
1/2 teaspoon salt
1/2 teaspoon baking soda
1 teaspoon baking powder
2 egg whites, room temperature
1 cup chocolate chips
1 cup chopped walnuts or pecans (can use more or less)



1. Set oven to 350 degrees.
2. Grease a 13 x 9-inch baking dish.
3. In a bowl cream together butter with sugar and 1/2 cup brown sugar until light and fluffy (about 4 minutes).
4. Add in water, maple extract and 2 egg yolks (reserve the whites in another bowl) beat for 2-3 minutes.
5. Mix together the flour, salt, baking soda and baking powder, then add to the creamed mixture; mix until combined.
6. Spread the batter into the prepared baking dish.
7. Sprinkle the chocolate chips on top of the batter.
8. Beat the egg whites until soft peaks form, then add in in 1/2 cup brown sugar; blend well.
9. Spread the egg white mixture over the top of the chocolate chips.
10. Sprinkle the top with chopped nuts.
11. Bake for about 35 minutes or until the meringue is light brown.
12. Cut the bars while still hot.

Ingredients

1 3/4 c all-purpose flour
1/2 ts baking powder
1/2 ts baking soda
1/4 ts salt
1/4 c butter or margarine;

1/4 c fruit-based butter and oil
-replacem
1 c firmly packed brown sugar
1 lg egg
1 lg egg white
1/2 ts vanilla extract
1 c reduced-fat semisweet
-chocolate chi

Instructions

1. Heat oven to 375oF. Lightly coat a 13x9-inch baking pan with
vegetable cooking spray. Combine flour, baking powder, baking soda and
salt in large bowl.

2. Beat butter and fruit-based butter replacement in large mixer bowl 3
to 5 minutes until blended. Add sugar and beat until well mixed. Beat
in egg, egg white and vanilla, scraping sides of bowl. Reduce speed to
low; beat in dry ingredients just until combined. Stir in chips.

3. Spread batter evenly into prepared pan. Bake 20 minutes until top
is golden brown. Cool on wire rack. Cut into 2x1 1/2-inch bars. Makes
36 bars.

1 box yellow cake mix
1/2 c. brown sugar
2 tbsp. butter
2 tbsp. corn syrup
2 eggs
1/2 c. chocolate chips
1 c. chopped walnuts
2 tbsp. water
4 tbsp. flour

Blend all ingredients in large bowl. Spread in greased pan, 9x13. Bake 25-30 minutes at 350 degrees.
