M is for modified - these engines have a few different internal components and different heads than a standard 351c or 351W. The 400 was also offered as an 'M' series engine.

Modified, it is a modified (de-stroked) 400 engine. the 400M does not exist. The modifications are different crankshaft and different pistons.
