i've heard this reduces the effect the juice has on the eyes, makint them less likely to be irritated. is this true?

Definately. What bugs your eyes (and nose) are tiny particles of onion juice that are in the air after you cut them. Cutting them under running water would significantly reduce the number of irritating particles in the air. However, I don't think it's wise to cut slippery onions under water with neccessarily pointy objects!

Onions release a chemical known as syn-propanethial-S-oxide in a gaseous form. This is what irritates people's eyes and makes people "cry". Cutting the onion under running water may help to reduce the amount of irritant released, though it won't eliminate it entirely. Since the chemical is released as a gas, burning a candle may also help to suck it out of the air (and away from your eyes).

hmmm.....well, it sure doesnt seem like a difficult experiment to conduct in order to prove or disprove a theory.....let me break it down for you nice and simple....
1. Buy an onion
2. Run it under the faucet
3. Slice away
4. Are ya crying????
....well, there ya go!
No, seriously, there are other factors that influence the outcome such as whether or not you wear contacts (they tend to absorb that burning acid) and how sensitive you are to onions to begin with. I don't know about slicing a 'union' under water;they might take exception to that.
Seriously tho,Yes,slicing an onion under running water does prevent tearing of the eyes.

No that does not work. Make sure you sharpen your knife often. This reduces the onions juices from coming out and making your eyes water/sting. You can buy a chefsmate knife sharpener cheap from target or wal-mart. Use it before each use and then hone the blade.

I have not heard of that type of onion cooking method, but I have heard that if you put onions in the freezer for a while, your eyes will not become irritated.

I have never tried to slice a union. I assume that you mean onion. In that case, yes.

the best thing to do , is a get a really sharp knife, the less you mess or irritate the onion flesh, the better (from releasing it's "eye toxin")

Yes, it does help. It keeps the chemical that makes your eyes water from getting to your eyes.

a union! OH an onion, no it doesn't help, I just use a cutting board and cut away from the body (cut to the board) them chop no tears.
