Sea Bass in french is "Loup de Mer", I used to prepare it when I was a chef, in saffron sauce, grilled with anchovy butter, poached with choron suace (choron is Bearnaise sauce with tomato paste added)

It is expensive, Black Bass is a nice alternative, or Halibut, Pacific Snapper is nice, and can be prepare in the same way.
