If a recipe calls for "cream" it means heavy whipping cream (not "whipped cream", whipping cream is in a little carton next to the milk.)

Yes, cream is heavy whipping cream. You will also find that evaporated milk ( pet milk or can milk ) will also work in most recipes. Its the consistency of the sauce or gravy that the milk will make the difference in. Try them all and taste the difference for your self. You can even use whole milk if you have nothing else available. You'll see, only the consistency of the sauce will be different. See which one you like the best.

cream (heavy cream or heavy whipping cream) both have a high content of fat, but 'heavy whipping cream' contains more, because it whips into whip cream faster.

You use this instead of milk beacause, you are trying to give sauce body, and make it more soupy like milk, which has a high content of water.

and becareful when adding to hot liquid, you want to first stir a little in the cream to warm up the cream then stir into your sauce.

It's heavy whipping cream before it's been whipped. You could substiute coffee cream or even evaporated milk in a pinch.
