When the meat hits the air ... you get this discoloration. Not harmful just not good looking. Of course, if the meat was left on the back shelf of your car in the blazing sun ...that's another story. Any good deli would slice off the discoloration before serving the meat.

I have seen this myself...you are not crazy. Actually cooked corned beef is even worse than roast beef. Unfortunately I cannot tell you why they appear this way since I do not know myself. I hope someone can answer you...I'm a bit curious myself.
