What are the chances of it working out? According to Islam, the kids(hypothetically speaking) have to be Muslim.

It has a small chance of working out. The chance decreases as the religiosity of each individual increases. Such a situation will work better if both are completely lax on their beliefs or one is completely lax and pliable to the other's faith.
According to God, the children of Catholics are to be raised Catholic. A priest will not marry you, or give you a dispensation to be married in a Muslim ceremony if you will not raise your children Catholic.
Might I suggest buying INSIDE ISLAM: A GUIDE FOR CATHOLICS. It is fairly benign and can make for a great conversation starter.

According to Catholic law, the children have to be Catholic with either your husband converting to Catholicism or agreeing to the rules of Catholic marriage and parenthood in order for any sacraments for you or your children to be valid. You're going to have to decide whether or not you want to remain true to your faith or convert to his. Are you ready to turn your back on your salvation?

If the woman truly loves her husband, who is a Muslim, then she must submit totally to him and embrace Islam. The children, by birth, will be Muslims by virtue of their father's religion.

if u r the girl , ifu care about your self when you marry this man it will be fornication because you will not marry himthrough the churche , + if u cares about the kids ,ithink you must find out if it will be better for them to be muslims or catholics(from the religious side not the social one)
