What can we do to help him NOT eat these types of food (basically in EVERYTHING!) if he does, he needs to go to the emergency room right away because his lungs don't work and he gets REALLY bad hives all over and basically, it's hard for him to breath, gets really really itchy, etc...

You need to speak with his doctor. Have the doctor write out an offical notice listing the allergies and what should be done if the child consumes them (Epi Pen??) You need to make several copies of the notice and give them to the school along with pictures of your brother so he can be identified. Now, there is no guarentee that the teacher, principle, lunchroom people etc can pick your brother out and recognize him as the allergic child so you have to accept that right away. You need to look at the schools menu and decide what he can and cant eat and maybe send in a note daily as to what his choices are for food. The best bet is to send him a lunch to eat as this will help make sure he eats only what he can eat. Unfortunatly, school lunches cater to the majority and there is no way he will be able to eat much of a choice from the lunch program.

Ask the teacher/school if your parent/s can be allowed to make a presentation both at parent's night and to the class so that everyone will be informed.

A child in my daughter's preschool had peanut allergy and we were all careful not to send anything with our kids that contained any. Granted your list is much longer and more inclusive of general foods, but information and education is the only way to deal with this. I might also ask if the teacher could be trained on the use of epipen, and be given explicit permission to use it should it be necessary. Your family may offer to be the family to provide all celebratory snacks when they are honoring birthdays or other celebrations. This way, you will know what is food is going in there, and they will all be the same, and he won't be singled out. I doubt they could turn down such a good offer.

First of all definitely talk to your child's teacher. In kindergarten kids do baking activities and stuff that may cause an allergic reaction

Another route may be to ask your doctor about an epi pen that could help if your child does get into one of the things he's allergic to.

The best solution is home schooling..,you can monitor what he ingests, you can monitor him and be prepared for the emergencies that will arise with the allergies.Public schools are not prepared for such emergencies and shouldnt be help responsible for a child with such needs, nor should the other children suffer because of one child..,ie no one can bring peanut butter sandwiches to school anymore because one child out of hundreds is allergic to them.I know it sounds harsh, but its reality.
