Are the sausages and bacon supposed to be browned before I cook them with the onions and potatoes? Also, my recipe doesn't call for much liquid. I know it's supposed to be more a stew than a soup, but how much does it take to cook the potatoes and onions properly? If you have any hints or would like to share a recipe, this Yank would be so grateful!

I'm going home right now to try out Auntyeim's recipe, never tried it with cider before, suspect she discovered it on a Fri. night after a visit to the pub! I can just see her swaying round the stove with a wooden spoon in one hand and a glass of cider in the other. OOPS!

This is the way I make it!!
Dublin Coddle

2 lbs seasoned pork sausage
2 large diced onions
1 lb lean bacon
2 cloves garlic, sliced
4 large potatoes, peeled and sliced
2 carrots, sliced
herbs
pepper (to season)
hard alcoholic cider or cider
Heat some oil in a pan, add onions and garlic and fry until soft.
Put sausages, bacon, potatoes, and carrots in the pan with the onions and garlic.
Cover with cider and cook over moderate heat for 1 hour
