Shop for them. If you look at what the equivalents of your gun are worth, then you can better prepare yourself to list a price.
Example: Browning Citori Lightning 20 gauge w/26" barrel...
I'd look it up on Guns America (the link to this is in a previous post I believe), check out the MSRP on Browning's website, and maybe post on some forum you feel has experienced people that frequent it. For rifles, I HIGHLY recommend snipercentral.com forums.
Now, for things like a military surplus rifle (Mauser K98, Enfield, Mosin, etc), take the condition your rifle is in, and find some online in that same condition (there are many whole-sale mil-surp gun dealers), and figure a price from there.

Used guns are hard to price online. The suggestion about gunbroker.com was a good place to start.
I would suggest checking out your local pawn shops to see what similar pieces are bringing.
