It depends on what you want to pickle........from early summer to late fall

I make dilly beans with my grandpa (pickled beans) and you have to make them right when the beans ripen. We made ours about a month ago. They have to age between 1 -2 months, so starting about now the first of those should be ready!

I think whenever the pickles are ready. I've seen them at the farmers markets recently.
