Sautéed Tilapia with Lemon-Peppercorn Pan Sauce
This piquant sauce is perfect over plain white fish. Use freshly squeezed lemon juice for the brightest flavor. Serve with white rice.
3/4 cup fat-free, less-sodium chicken broth
1/4 cup fresh lemon juice
1 1/2 teaspoons drained brine-packed green peppercorns, lightly crushed
1 teaspoon butter
1 teaspoon vegetable oil
2 (6-ounce) tilapia or sole fillets
1/4 teaspoon salt
1/4 teaspoon freshly ground black pepper
1/4 cup all-purpose flour
2 teaspoons butter
Lemon wedges (optional)
Combine first 3 ingredients.
Melt 1 teaspoon of butter with oil in a large nonstick skillet over low heat.
While butter melts, sprinkle fish fillets with salt and black pepper. Place the flour in a shallow dish. Dredge fillets in flour; shake off excess flour.
Increase heat to medium-high; heat 2 minutes or until butter turns golden brown. Add fillets to pan; sauté 3 minutes on each side or until fish flakes easily when tested with a fork. Remove fillets from pan. Add broth mixture to pan, scraping to loosen browned bits. Bring to a boil; cook until reduced to 1/2 cup (about 3 minutes). Remove from heat. Stir in two teaspoons of butter with a whisk. Serve sauce over fillets. Garnish with lemon wedges, if desired.
Yield: 2 servings (serving size: 1 fillet and 2 tablespoons sauce)

Simple Lemon Sauce
4 Lemons Juiced and pulp retained
4 tablespoons melted butter
2 teaspons cracked pepper
mix all together pour over fish and bake covered at 350 for an hour
mix in pulp for texture and extra flavor if desired

Lemon goes good with just about anything you put with it.
When baking fish, I prefer to squeeze pure lemon juice over each piece of fish and then pour some purified butter over the top of that just before baking. Marvelous flavor, especially over baked salmon.

Lemon Butter Sauce for Fish
1/4 cup butter
1 tablespoon lemon juice
1 garlic clove, minced
1 teaspoon instant chicken bouillon granules or beef bouillon granules
1 teaspoon parsley flakes
1/2 teaspoon knorr aromat seasoning, for meat (optional)
1/4 teaspoon basil
1/4 teaspoon paprika
1/4 cup dry white wine
2 tilapia fillets
Melt the butter and add remaining sauce ingredients.
Pour sauce over tilapia filets.
Bake at 350F for 20-30 minutes.
Serve with rice.

Lemon or lemon-lime soda, flat or otherwise
Salt to taste
2 tablespoons butter or margarine
2 tablespoons flour
1 or 2 teaspoons lemon juice
Place fillets in a skillet. Barely cover with soda. Salt lightly. Cook until tender, or until fish flakes easily with a fork.. Drain liquid into a measuring cup. Add additional soda or plain water if necessary to make 1 cup. Melt butter in a saucepan over low heat. Stir in flour. Stir in liquid slowly, continuing to cook over medium heat for a few minutes, or until thickened and smooth. Add lemon juice. Pour sauce over fish and serve to 3 or 4.

the easiest way - after you pan fry your fish, pour out the excess oil but keep the bits stuck in the pan. melt some butter in the pan, and squeeze in the juice of half a lemon, you can toss in some capers and parsley if you wish, season with pepper and salt and pour over prepared fish.
